It's Summertime!

The sun  is out, and you know what that means.... summer cooking! 

Grilling, campfires, picnics, we love them all! What do all these great summertime traditions have in common? Eating outdoors and away from the kitchen. However, filming an outdoor project in the summertime is no picnic. When working long hours outdoors, the crew always appreciates a cool treat. Cherry Angel Food Pie is a perfect dessert for set.  


While I love to cook, I don't relish (mmm, hot dog) the idea of spending my summer in the kitchen, so I turn to a few standby recipes to lighten the load.  Today's CRAFTY SOLUTION is a dessert that will help you spend more time having summertime fun and less time in the kitchen.

Cherry Angel Food Pie
Ingredients
12 oz. cool whip
1 tsp. vanilla
8 oz. sour cream
8 oz. cream cheese, softened
9 oz. angel food cake
1 can cherry pie filling

Beat cool whip, vanilla, sour cream, and cream cheese.  Tear angel food cake into chunks and stir in.  Press into 8x8in. pan.  Cover with pie filling.  Chill and serve! It's close to the 4th, so garnish with blueberries if you're feeling sassy. You can use other pie fillings, but the tart cherry flavor compliments the sweet cake.  If you choose to buy your cake loaf at the store you never have to turn on the oven!

This is one of those great recipes that you can make ahead or last minute.  It's always better to make ahead so it can chill longer, but isn't that one kind of obvious?! It's better to plan ahead.  Do I always do it? No, but it's the summer, a time of last minute gatherings that bring lasting memories.
